We talked about … The Wine: Sheep 2012

Evaluation Bibenda 3 Bunches: Wines of good level and particular finesse. Enjoyable now and for another 2 years. White IGT. 100% sheep’s tail.
The project, created by the entrepreneur Cesare Avenia with some friends known at the time of high school, is permeated by a deep love for the area and by the desire to enhance and communicate its potential. In addition to the historically bred vines, Casavecchia, Pallagrello White and Black, the winemaking of the Coda di Pecora variety has been experimented with purity for two years, cultivated once between Roccamonfina and Montemaggiore. Then Sheep was born, with a light golden color. The olfactory picture ranges from fruity references to floral effusions to evident touches of aromatic herbs. Taste pervaded by great flavor together with freshness and good persistence. Whole steel processing for 7 months. Ricotta and zucchini ravioli with butter and sage.
